Homemade Cookie Dough Brownies

Brownies are my signature bake, but honestly I do get a bit bored of them sometimes. So I’m always looking for ways to play around. When I found a recipe for an eggless no bake cookie dough recipe I just had to combine it with my classic brownie recipe!

It turned out that they were actually a lot easier to make than I originally thought they would be, and are great for any skill level baker. One of the best things is that there is no extra equipment is needed, so really are great for anyone.

They turned out great and were a massive hit amongst the family, I’ll definitely be making them again. Although it might be better to cut them into slightly smaller squares as they are very rich! The combination of brownies and cookie dough is just amazing and everything you could ask for from a sweet treat. And lets face it how could brownies and cookie dough ever be a bad match?!

Homemade Cookie Dough Brownies

Ingredients:

Makes 20

Brownies:

  • 300g of butter
  • 2 1/3 cups of caster sugar
  • 1 1/2 cups ml of cocoa
  • 1 teaspoon of salt
  • 2 teaspoons of vanilla essence
  • 4 eggs
  • 1 cup of plain flour

Cookie Dough:

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 2 teaspoons vanilla extract
  • 6 tablespoons milk of choice
  • 2 cup plain flour
  • 1 teaspoon salt
  • 1 cup mini chocolate chips

For the Brownies:

  1. Line a baking tray with greaseproof paper and preheat your oven to 170 degrees
  2. Melt the butter (in the microwave or over a pan of boiling water)
  3. Mix in the sugar
  4. Mix in the Cocoa
  5. Add the salt and vanilla essence
  6. Wait for the mixture to cool slightly
  7. In a separate bowl whisk the eggs together
  8. Slowly pour the eggs into the brownie mixture and combine
  9. Sift in the flour and combine
  10. Cook for roughly 30 minutes

For the Cookie Dough:

  1. Cream together the brown sugar, white sugar, and butter until smooth and pale
  2. Mix in vanilla and milk
  3. Sift  in the flour and combine
  4. Stir in chocolate chips
  5. Spread the cookie dough evenly on top of cooled brownies
  6. Refrigerate until firm for around an hour
  7. Cut into even squares
