Shortbread 3 Ways!

I absolutely love baking but often find it quite hard to find the time. So this recipe is really great for when you’re a bit short of time.

Ingredients for shortbread

Shortbread is really versatile and is great for playing around with. So I decided to try it in 3 different ways:

  • Jam, similar to a Jammie Dodger
  • Dipped in chocolate
  • Gold funfetti

This recipe for the basic shortbread is extremely easy and quick!

  • 1 cup butter, softened
  • ½ cup icing sugar sugar
  • 1 tsp. vanilla extract
  • ¼ tsp. salt
  • 2½ cups all-purpose flour
  • Optional toppings
    • Raspberry Jam
    • Chocolate
    • Gold funfetti
  1. Preheat the oven to 180°C
  2. Line a large baking tray
  3. Cream together the butter and sugar
  4. Mix in vanilla extract and salt
  5. Add the flour gradually
  6. Sprinkle flour onto the surface
  7. Roll out the dough until it is about ⅛ inch thick.
  8. TIME TO GET CREATIVE, here’s what I did for the jam recipe…
  9. Cut out the hearts
  10. On half the biscuits, cut out a smaller heart shape in the center.
  11. Bake for 8-10 minutes
  12. Once called spoon a teaspoon of raspberry jam on to the base and place the cut out biscuit on top
  13. Here’s what I did for the biscuits dipped in chocolate…
  14. Melt 100g’s of chocolate slowly in the microwave (20 seconds at a time)
  15. Cut out the hearts
  16. Bake for 8-10 minutes
  17. Once cooled dip in the melted chocolate
  18. Place on greaseproof paper to set
  19. Here’s what I did for the gold funfetti biscuits…
  20. Sprinkle the gold funfetti into the dough and mix
  21. Cut out the hearts
  22. Bake for 8-10 minutes

Sprinkle with icing sugar!
