I absolutely love baking but often find it quite hard to find the time. So this recipe is really great for when you’re a bit short of time.
Shortbread is really versatile and is great for playing around with. So I decided to try it in 3 different ways:
- Jam, similar to a Jammie Dodger
- Dipped in chocolate
- Gold funfetti
This recipe for the basic shortbread is extremely easy and quick!
- 1 cup butter, softened
- ½ cup icing sugar sugar
- 1 tsp. vanilla extract
- ¼ tsp. salt
- 2½ cups all-purpose flour
- Optional toppings
- Raspberry Jam
- Chocolate
- Gold funfetti
- Preheat the oven to 180°C
- Line a large baking tray
- Cream together the butter and sugar
- Mix in vanilla extract and salt
- Add the flour gradually
- Sprinkle flour onto the surface
- Roll out the dough until it is about ⅛ inch thick.
- TIME TO GET CREATIVE, here’s what I did for the jam recipe…
- Cut out the hearts
- On half the biscuits, cut out a smaller heart shape in the center.
- Bake for 8-10 minutes
- Once called spoon a teaspoon of raspberry jam on to the base and place the cut out biscuit on top
- Here’s what I did for the biscuits dipped in chocolate…
- Melt 100g’s of chocolate slowly in the microwave (20 seconds at a time)
- Cut out the hearts
- Bake for 8-10 minutes
- Once cooled dip in the melted chocolate
- Place on greaseproof paper to set
- Here’s what I did for the gold funfetti biscuits…
- Sprinkle the gold funfetti into the dough and mix
- Cut out the hearts
- Bake for 8-10 minutes
Sprinkle with icing sugar!
